A single, delicious rack of lamb will nicely serve two or three lucky dinner guests, at two to four chops per guest. Our famous rack of lamb comes as eight French-trimmed chops and delivers an unforgettable flavour.

Yes, all products are cut fresh to order so they are perfect for home freezing.
Always remove your meat from the refrigerator one hour before cooking. Allow it to get to room temperature. When finished cooking, always allow your meat to rest for 10 minutes before carving.
Yes, we can trace each piece of meat that enters and leaves our premises. We use a cloud-based traceability and HACCP system with the latest software that is available to us.

Our lamb is carefully selected by a dedicated farmer in Co. Kildare. He’s renowned for using traditional techniques and skilled craftmanship to consistently find the finest quality meat.

We dry age it in store ourselves for an additional 7-10 days, as this is the optimum length of time to mature the meat. This evaporates any excess moisture, resulting in a wonderful texture and unforgettable flavour.
