Short ribs are hugely popular US-style cut used for braising and smoking. Becoming more and more popular on this side of the water, they’re cut from the brisket, chuck, plate or rib. Deliciously tender, a short portion of rib bone is overlain by meat, which varies in thickness.

Short ribs are a bone-in cut, taken from the mid-section of the ribs. A fantastic braising and smoking cut, they’ll softly fall from the bone when slow cooked. Please note that your short ribs will come as one piece, unless you provide other instructions for our butchers in the comment box when ordering.

Our highly-experienced butchers work very closely with our select purveyors. This allows them to ensure that the quality of meats is pristine year-round. We source from small farms around Ireland to bring you limited amounts of special cuts that are not found anywhere else.
Our specifically bred beef is fed on a natural grass diet and is marbled to produce an unforgettable flavour. It’s also aged on the bone in our onsite dry-aging chambers using methods unique to Higgins Family Butcher for up to 120 days.
