This is what is known as ‘bucket-list beef.’ Cut from cattle that have roamed the Galician hills for between 8 and 15 years, the rib-eyes have a famously-strong flavour that comes from its intense marbling.
While it’s “meat from a fat old cow”, it’s said to be amongst some the best beef in the world. This is because it’s from a breed of bulls and cows called ‘Galician Blond’ (or Rubia Gallega). Over eight years old, they come from Galicia in north-western Spain.
