We dry cure our bacon by massaging salt into our prime Irish pork. This results in the perfect balance of moisture and salt in the pork, which develops its famous characteristic flavours.

 

We only use free range pork that’s been raised outdoors on grassland for most of the year. Sourced from the wonderful green fields of Co. Wicklow, they’re provided with a natural relaxed atmosphere and extremely high animal welfare standards. All this ensures the fantastic flavour of our famous pork products.

Yes, all products are cut fresh to order so they are perfect for home freezing.
Always remove your meat from the refrigerator one hour before cooking. Allow it to get to room temperature. When finished cooking, always allow your meat to rest for 10 minutes before carving.
Yes, we can trace each piece of meat that enters and leaves our premises. We use a cloud-based traceability and HACCP system with the latest software that is available to us.
